The new vintage has a much darker color and taste, and it is enough to drink.
Modeled after the wine made by farmers until about 40 years ago, it is made without doing anything wasteful.
What is this profound feeling? I can't help but think, a solid and dense mineral.

It is not "heavy" by any means, but it is packed with flavor like dashi (Umami).
I think you can go with any seafood-based dish. Oysters are sure thing!

The three different roles create a deep flavor


Mattia Cristofori <br>Mattia and Michele grew up like brothers from a young age because their parents were best friends. He was stationed in Myanmar and Laos for a total of six years as a member of an Italian government agency, where he was involved in activities to support the people of both countries in a wide range of fields, including sustainable agriculture/food production, hygienic food manufacturing, and rainforest conservation.
He has also participated in a joint project with Japan's JICA.
He currently handles a wide range of responsibilities, from coordinating farm work to managing the hotel.

Matteo Fazoli <br>To take over the family business (Fazoli Gino, pioneer of organic wine in the Soave area)
He studied oenology at university and became a brewer. At Taj, he is always thinking about winemaking and farm management. Matteo, who has many years of experience in winemaking in Italy, South Africa and Argentina, returned to his family's Fazoli Gino, but he did not get along with his father, the renowned brewer Natalino, and was searching for his own path.

Michele Zorzi While working at an investment bank, he was searching for a way to work in the natural environment that he had been familiar with since childhood. The salary he received from the farm was far below that of an investment bank, so Mattia and Matteo did not ask him to work full-time on the farm, and he would usually only come to work.
He still works at a bank and owns a vineyard.

Around 2008, Michele and Mattia, who was based in Myanmar at the time, began discussing the possibility of producing grapes and making wine that reflected the natural environment of the land while protecting it, on a very unusual vineyard that was formerly a limestone quarry owned by Michele's father.

They decided to establish a natural resort hotel, taking advantage of the farm and the location of the perfect tourist destination (close to Lake Garda, Verona, and Venice). Matteo heard about his two best friends' decision and decided to join them, thinking that his skills could be of use.

"Agriculture that protects nature" "Taj's unique flavor"

The name of the farm, Taj, means "silent" in Veneto dialect.
It means that the wine will speak, nature will speak, so let's just keep quiet.
The wines produced under the mottos that the three decided on when they first established the farm - "agriculture that protects nature" and "wine with a unique Taj taste" - resonate deep within the body and mind, and their reputation continues to grow!
And so the three of them become more determined.

Michele's financial knowledge, Mattia's international sense and sales skills, and Matteo's winemaking know-how that he has inherited are all of great help in these wines, which shine with the friendship between men, so you won't want to take your eyes off them!

[Former limestone quarry at an altitude of 500m]

The altitude is 500m. Because it is at a high altitude and is in a windy area, wind blows all year round.
In addition to the 7 hectares of forest in the garden, there are other forests scattered around, making for a perfect natural environment.
Located 400-500m above sea level and surrounded by forest, the farm feels like another world.
About 10 km away is the Lessinia Nature Reserve, a mountainous area at an altitude of 2,000 m, and is blessed with an unpolluted surrounding environment.
The land is infertile because it was originally a limestone quarry.
Just dig a few centimetres and you'll find limestone.

The fields are added with compost made from materials from the farm several times a year, and green manure is used to maintain a minimum level of soil fertility.
By using a water solution of spores, mycelium, medicinal herbs, seaweed, compost*1 and plant fragments for pest control, and limiting the amount of copper used to 1 kg, we are actively promoting environmental protection.
