The cuvée is named after a song by the American rock band Pixies.

The slightly cloudy, pale color makes me excited.
It has a sharp acidity like pickled plums and is full of dashi extract.
A must-have for lovers of the light and delicious flavors of the Loire.

The Pinot Noir purchased from Vincent Leclair in Pouillet was macerated whole-cluster for five days in a carbonic atmosphere, after which it was fermented and aged for eight months in fiberglass tanks.

 

[Producer information]

Born in Tours, Loire, on September 16, 1985. After majoring in economics at university, a subject completely different from wine, he studied abroad in the United States. During his summer vacation, he experienced harvesting grapes in a vineyard, which is when he realized the wonder of nature.
Upon returning  in 2009, he decided to harvest grapes at Lise et Bertnard Sousset in Montlouis and make wine. He immediately enrolled in oenology school in Amboise to study oenology in earnest. After intensive study of oenology, he worked at Domaine Terres Promises and Christophe Comor in Provence from 2012 to 2013. Then, in 2014, while working for Noella Morantin, he met Catherine of Clos Roche Blanche and purchased her 6.7 hectares of pesticide-free vineyards, which she owned after retiring from winemaking.

The vineyards are 6.5ha of Caux, 2.5ha of Sauvignon Blanc, 0.8ha of Pinot Noir, 0.6ha of Cabernet Franc and Cabernet Sauvignon, and 0.5ha of Gamay.
Julian's youthful sensibility has been perfectly captured in the bottle since the first vintage, and every wine tastes ultra-natural. It's hard to believe he's a newcomer.
