~A brewery that has captivated even professionals who didn't approve of BIO~
Damien, the fifth generation of a family that has been involved in winemaking for generations, aspired to become a winemaker from a young age and enrolled in the Bordeaux School of Winemaking to study winemaking, where he met Coralie by fate.
The two absorbed the ideas of various producers from Chablis, Bordeaux, California, and South Africa, and in 2002 established their own winery in the village of Amboise in the Loire, where their predecessors had been growing grapes for generations.
Amboise has a very harsh climate, but the couple were determined to make wine in a more natural way, using the land where their ancestors had grown grapes for generations and in vineyards with old vines.

The winery has become so popular that it even won a star in "La Revue du vin de France."
Based on their taste, I would like to give them the nickname "a winery that will captivate even professionals who don't recognize BIO!" This is how much they focus on the "taste of wine." It's a type of winery that I haven't encountered in the Loire until now.

Currently, with two employees and one seasonal worker, they make wine using biodynamic farming methods from grapes harvested on 14.50 hectares of vineyards (7.50 hectares in Amboise and 7.00 hectares in Montlouis). SO2 is used a little at bottling time, or sometimes only a small amount when squeezing the juice, depending on the situation.

The vineyards are planted with a mix of 120 year old Caux vines, Cabernet Franc, Gamay, younger Caux vines and older Caux vines in each row.
In "marcotage" (a method of propagating a pied-faire (daughter) tree by taking cuttings from a parent pied-mée (mother) tree), the baby tree created is left connected to the parent tree like an umbilical cord, and the parent tree raises the baby tree.
After 10 or 20 years, the offspring will become independent plants and be separated.
Even if the old parent plant is pulled out, the baby plants remain and produce more grandchild plants.
