The encounter took place on a trip to Aomori
I will never forget the shock I felt when I tried it at a restaurant recommended to me by an acquaintance.
A solid structure reminiscent of a classic Italian white wine.
It has the aroma of plump fruits such as ripe pineapple, lychee, and grapefruit, and fresh herbs. It has a mild acidity and a moderate richness that makes it easy to drink and enhances the flavor of your meal.
It can be used for a wide range of dishes, including fatty fish, cheese, pork, and chicken.
This wine is made from Malvasia grapes grown in our own 1.5 hectare vineyard overlooking the sacred mountain of Tsugaru, Mt. Iwaki. The grapes are harvested in early November, later than the Nebbiolo grapes, and the grapes are selected one by one, then de-stemmed and crushed.
After about half a month of alcoholic fermentation, malolactic fermentation takes place.

Michiaki Sasamori of Osteria Enoteca da Sasino, an Italian restaurant in Hirosaki City, Aomori Prefecture, which is committed to locally produced and locally consumed ingredients, obtained a brewing license in 2010 because he wanted to make wine from grapes he grew himself.
We cultivate and brew grapes such as Nebbiolo, Malvasia, and Chardonnay in fields overlooking the sacred Mount Iwaki.
The current vineyard is 1.4 hectares in size and mainly produces the Italian grape variety Nebbiolo.
The amount of Nebbiolo produced in Japan is still low, so if the reputation of this winery increases, it may attract attention from around the world. As a way of giving back to Hirosaki, he spends his days working with wine.
He took the initiative to make Hirosaki City a "house wine special zone." Although he struggled to make wine like no other before, his wine is now highly regarded.
