La Nou de Gaia is a very unknown village in Catalonia.
4km from the sea, with mountains behind. It's a place where the wind blows all the time, and even in 2019, when there was an abnormal heatwave with temperatures exceeding 40 degrees, the temperature was only a little over 30 degrees.
A field of white powder sand made from extremely pure limestone that has been broken down over many years. Connected to the microscopic details of minerals.
Currently, they own a total of 14ha of vineyards. In this region, the xarello, which is often used for cava, is called cartoixa.
However, it has a completely different taste from xarello, which is made for cava.
In this area, cartoixa matures slowly and slowly.
Therefore, the condensation of flavor and depth is extremely elegant.
Powdered minerals intertwine with it perfectly, developing a unique flavor to wine.

There is no press machine in this winery!
Using only "free run juice" that flows from the weight of the grapes.

When placed in a tank, the bottom part collapses due to gravity and fermentation begins.

They first make a starter using healthy grapes grown in a field that does not use any SO2 or artificial yeast, and then  start fermentation after growing healthy natural yeast.
