A red wine from a female winemaker I visited 7 years ago, now exceptionally delicious after excellent aging.
When I tasted this vintage again after a long time, it was so delicious that I impulsively ordered all available stock. It has softened and rounded out wonderfully, melting in the mouth. While it has a good concentration, the finish is smooth and inviting, making you reach for another glass.
From 55-year-old vines. Destemmed and macerated for 8 days in tronconic tanks.
Aged for 12 months in 500L demi-muid barrels.

【Producer Information】
Sandrine originally worked to discover natural wines in France and introduce them to Japan.
At that time, natural wines were not as widely recognized in Paris as they are today.
Since then, she has observed the winemaking of many natural wine producers who are now considered masters, and has introduced their wines to Japan.
Through her work, she met and married Elian Dalle, a top producer in Sud-Ouest.
Elian Dalle's family originally ran an orchard, so he had been in contact with nature and soil since childhood. Locally, he is now said to be unrivaled in his knowledge and experience regarding soil.
Coincidentally, in 2012, she found a 52-are vineyard that she simply had to buy.
A few years later, an opportunity arose to purchase a wonderful 2-hectare vineyard for red wine, and Sandrine launched her own business separate from Elian Dalle.
Sandrine, who gained various knowledge from cultivation to winemaking methods through connections with master producers, married Elian Dalle, a professional in soil.
With great support in both her personal and professional life, she encountered a small vineyard that gave her goosebumps the moment she saw it, making it impossible not to purchase it.
These three elements combined led to the birth of a great wine from the very first vintage.
Sandrine is constantly evolving, consulting with renowned peers like L'Anglore, Olivier Cousin, and Murezip, who are now considered masters, about her winemaking.
