The crisp acidity is pleasant, and the fruitiness is young and fresh. Even without adding SO2, there is no instability, and I'm happy that I can enjoy it on the second day as well.
21 was a cold and rainy year, and we had to fight against mildew. The whole bunches of three varieties, mainly Pinot Noir, grown in Keuper soil, were pressed directly and fermented and aged for nine months in 12.5hl foudres.

Andy Weigandt, born 1991.
In 2018, he officially took over his parents' vineyard and began making wine.
His parents started making wine in 1990, and he was forced to help out in the fields after school as a child. He says he hated working in the fields at the time because he just wanted to play.
He loves making music and once dreamed of becoming a professional DJ, and he still plays records at clubs on some days.
While he was in school, he was undecided about whether to take over his parents' business, but after graduating from high school, he ended up helping out with his parents' winemaking business for two years, from 2011 to 2013, as an indentured servant.
During that time, you will become completely captivated by the charm of grapes, fields, nature, fermentation and aging.
Wanting to learn more about winemaking in a more systematic and intensive way, he studied intensively at the Oenology Department of the world-famous Geisenheim University in the Rheingau from 2014 to 2017.
During this time he makes lifelong friends.
The group consisted of Martin Werner and Andy Mann from Rheinhessen, and they all lived in a dormitory where they would drink and talk about winemaking and the future every night.
All of us love natural wine.
During this period, they all decided that when they returned home, they would convert their vineyards to organic farming, change the brewing method to one that minimized human intervention as much as possible, and make natural wine.
He apparently has many idols, but Austria and France (especially Alsace and the Jura) are the best, and he lists the names of stars like Sepp Muster, Zeppe, Preisinger, Riesch, Meyer, Overnois, Ganeva, Cavalod, and ``Oh, Matassa in the south is also great,'' and so on and so forth.
He will take over winemaking in 2018 after graduating from Geisenheim.
There are about 25 winemakers in the village, and they together own about 500 hectares of vineyards around the village.
The Weigandt family also owns approximately 9 hectares of land in the hills just surrounding the village.
In addition to him, his parents, both grandparents, and a Romanian employee, six people look after the vineyards, and all of the vineyards have already been certified organic.
He plants a variety of plants each year to bring more plant diversity to the fields, hoping to return them to as natural and original a state as possible.
The fields are covered in beautiful greenery and are filled with a generous and cheerful spirit, reflecting his personality.
The Weigand family's greatest pride is that all of their vines are between 40 and 60 years old. These vines firmly support Andy's winemaking style. The Scheurebe is 45 years old, the Riesling is 60 years old, and of course the beloved 40-year-old Silvaner is the star of the Weigand family's winemaking.
Apart from that, it seems that 60-year-old Mullertorgau vines are rare even in Germany.
New Chardonnay and Pinot Noir vines were planted in 2018 and 2019.
The soil is all Keuper mudstone.
The rocks are composed of sand, clay, carbide, marl, etc. and are said to have been formed about 200 million years ago.
This soil gives the wine a refreshing taste reminiscent of herbs, minerality and spice that evokes saltiness and white pepper, and fresh acidity.
