FALESTAR PIGNOLETO 2022

Region: Italy Emilia Romagna

Grape: Pignoletto

Category: White/Fine bubbles

This is a masterpiece of cloudy microfoam.

Add nothing, subtract nothing. Because it is brewed without filtration, there is a lot of lees, which is a mass of umami ingredients.
The moment you put the flavor-filled liquid into your mouth, a shock runs through your entire body. A unique flavor that coexists with the natural sweetness of grapes and the bitterness of the variety.
The last cup, which was much darker in color, was a scramble.

*Please chill this wine thoroughly before opening it slowly. The yeast is active so be careful of boiling over.

[Producer information]

Maria Bortolotti is located in Colli Bolognesi, the easternmost region of Emilia-Romagna, Italy.
The hilly area of Zola Predosa, where his vineyards are located, is considered the best land in the area for growing grapes.
His name was also mentioned in documents from 1,000 years ago.

The head of the family, Flavio Bortolotti, was born in 1965.
With an eye on the future, Flavio took the lead in starting organic cultivation in 1992, and biodynamic cultivation soon after.
With natural winemaking as their motto, they strive every day to create wines that are delicious and affordable for anyone to drink.

Winery
The brewing equipment is quite simple.
only this? ? A winery that is far from cutting-edge machines than you might think.
Mr. Flavio knows the most advanced machines and complicated brewing methods, but he doesn't use them because he doesn't like them.

The idea is to make it simple, and the yeast is all natural.
There is no temperature control during fermentation, but the temperature is lowered by removing the lees (transferring tanks).
Basically, I don't use a filter.
The concept is that you don't have to touch the wine.
A winery that is so simple that the person himself says there is no need to explain it.

The secret to the flavor
The high iron content produces tannins in the grapes, creating a firm structure.
The tannins make this wine suitable for long-term aging.
Because the amount of SO2 added is small, the tannins contained in the grapes oxidize, making even white wine darker in color.
