Crozes-Hermitage, Syrah grown on limestone soil in the village of Beaumont-Montoux, whole bunch maceration carbonic, pressed, fermented and aged in cement tanks. In January 2012, in search of the ultimate Syrah, I drove from Valence, the main city in the northern Rhône, across the Rhône River and headed west for 15 minutes toward the Rhône Mountains, where I found the great AOC Cornas.
Located south of Saint-Joseph on the right bank of the Rhône River, the fields of Cornas, which means "burnt earth" in Celtic, are spread out in the form of steps called terraces on steep, east-facing slopes that are exposed to the harsh sun.
Most of the red wines produced from this historic vineyard are made with 100% Syrah. Red wines from the northern Rhône are generally made with Syrah as their main ingredient, but to soften the strong astringency that is characteristic of this region, wines such as Viognier, Marsanne, and Roussanne are used. It stipulates that white grapes be used as a slightly complementary variety.
However, this AOC Cornas does not have that provision.
As a result, wines with dark colors and strong tannins are produced.

Machu Valley, the producer of Domaine du Cré, took over his grandfather's domaine here in Cornas in 1999 and now owns 13 hectares of fields. The soil is an old granite called ``Gore'' that gives the wine a mineral feel. The average age of the trees is 35 to 40 years, including old Syrah trees that were planted in the 1920s and are 80 to 90 years old. In order to take advantage of the vitality of the soil, we have been practicing biologic farming since 2001 and biodynamic farming since 2002, and in order to value harmony with nature, we have left a thicket of trees called ``haie'' around our fields in a natural form. , and adjusts the moisture content in the ground. The soil in the field is fluffy and you can clearly see that the vines are living with vigor.
We are very particular about the brewing method, and fermentation is carried out in oval cement tanks that store the strength of the grapes and remove the lees, and we do not use new barrels for aging in order to maximize the expression of the terroir.
