This is a staple wine to drink with meals. A dry Grillo with a strong structure.
It has a salty minerality typical of Sicily and a strong taste of ripe fruit, but is also quite dry and very satisfying to drink.
It has the power to enhance food in a way that sour, fruity wines don't.
Once you combine it with seafood ajillo or yakitori, you won't be able to stop eating it.
After 5 to 8 days of maceration, the wine is pressed very gently.
Aged in stainless steel tanks.

When it comes to Sicilian wine, the image that comes to mind is that of the foothills of Mount Etna and the Marsala region east of Palermo.
Aetna is currently in a bubble. Ten years ago there were 15 companies, but now there are over 100.
In this context, Vittoria, located in the southeastern part of Sicily, northwest of Ragusa, is attracting a lot of attention in the future.
When it comes to natural wineries in this area, Cos and then Occhipinti were pioneers, but in the same era, Giulfo was also a company that steadily cultivated its fields using natural farming methods.
The current owner, Achille, became the owner in 2005.
●Field
Julfo is the name of a road and a place.
It has a typical Mediterranean climate, with plenty of rain in the winter and warm, dry and hot summers.
It is mainly grown as a hedge, with setonche being seen in some places.
The impressive organic farming is obvious at a glance.
The soil is limestone, including porous carbonate limestone, which gives the wine its delicate flavour.
Ancient shell fossils have been unearthed and ancient minerals are still alive.
It is clear that all kinds of undergrowth are growing and that legumes are producing sufficient nitrogen.
There are various types, such as uncultivated areas and fields where the fertilizer has been mixed into the soil.
The total area of the site is 90 hectares, including ponds and woods for circular agriculture, olives and other crops, and 34 hectares for grapes, cultivating 20 varieties.
All grapes are grown in-house, so even though the area is large, the quantity is small.
