The sweet and sour taste of plums and the concentrated flavor of raisins.
It's great on its own, chilled, as an aperitif, but it also goes perfectly with Chinese dishes like gyoza and mapo bouquets.

The wine's name means "chatter" in Bolognese.

Maria Bortolotti is located in Colli Bolognesi, in the eastern part of the Emilia-Romagna region of Italy.
The Zola Predosa hills, where his vineyards are located, were mentioned in documents 1,000 years ago as the most suitable land for grape growing in the area.

The current head of the family, Flavio Bortolotti, was born in 1965.
With an eye to the future, Flavio took the reins and began organic farming in 1992, soon followed by biodynamic farming. Their motto is to make wines that are natural and affordable for everyone to enjoy.

Winery <br>The brewing equipment is very simple.
This winery is far removed from the most cutting-edge machines, making you wonder if that's all there is to it.

Although Flavio knows about the latest machines and complicated brewing methods, he doesn't like them and doesn't use them. His philosophy is to keep things simple, and he uses only natural yeast.
There is no temperature control during fermentation, but the temperature is lowered by racking (transferring to another tank).
Basically no filters are used.
The concept is to not tamper with the wine.
It's such a simple winery that the owner himself says there's nothing to explain.

The secret to its delicious flavor <br>The high iron content causes the grapes to produce tannins, creating a firm structure.
The tannins make this a wine that is suitable for long-term aging.
Because the amount of SO2 added is small, the tannins in the grapes oxidize, causing even white wines to darken in color.
