[Producer Information]
Maria Bortolotti is located in Colli Bolognesi, in the easternmost part of Emilia-Romagna, Italy.
The hilly area of Zola Predosa, where his vineyards are located, was considered the most suitable land for grape cultivation in the vicinity
and was mentioned in documents from 1000 years ago.
The owner, Flavio Bortolotti, was born in 1965.
Flavio, with an eye on the future, began organic farming in 1992, and soon after, biodynamic farming.
His motto is natural winemaking, and he strives every day to produce delicious, affordable wines that anyone can enjoy.
Winery
The brewing equipment is very simple.
It's a winery that seems to be far from state-of-the-art machines, to the point where one might wonder, "Is that all there is?"
Mr. Flavio knows about state-of-the-art machines and complex brewing methods, but he doesn't use them because he doesn't like them.
His philosophy is simplicity, and all yeasts are natural yeasts.
No temperature control is performed during fermentation, but the lees are removed (by transferring the wine to another tank) to lower the temperature.
Filtering is generally not done.
The concept is not to interfere with the wine.
It's such a simple winery that he says he has nothing to explain.
The Secret of Umami
Due to the high iron content, tannins are produced in the grapes, creating a firm structure.
Thanks to the tannins, the wine is suitable for long-term aging.
Because the amount of SO2 added is small, the tannins contained in the grapes oxidize, and even white wines become darker in color.
