Sylvain can't stop talking about Aligote. Although it is an entry-level Aligote, it is not only simple and easy to drink, but also has harmony and depth. Made from calcareous soil, with a low yield of about 40hl/ha, the harvest is fully ripe, and the wine is carefully brewed. The result of careful consideration is a wonderful wine that overturns preconceptions about this variety. If you think "what is Aligote?", you will definitely be left behind by the times. We highly recommend that you try it at least once.

A producer with the ability to break down and renew the preconceived notions and evaluations of Marsannay in the northern part of the Côte de Nuits. After graduating from two winemaking schools in Beaune and Bordeaux, the owner, Sylvain Pataille, became involved in winemaking as a winemaking consultant in his hometown of Burgundy.
In 1999, he took over his grandfather's farm and began his own production.
Currently, they cultivate 16 hectares, including contracted vineyards. They use only wild yeast for brewing, ferment whole bunches as a rule, and perform a slow and long maceration (around 30 days) like boiling the skins to make a wine that can withstand aging even in the cooler northern regions.
His skills are highly regarded locally, and for a long time he had contracts with 10 to 15 companies for brewing consulting, but in recent years he has stopped consulting and is focusing more on his work at the Domaine.
