It may seem sweet from what I've described so far, but Petilland from the south of France has a crisp, dry taste.
The gentle fizziness and slightly bitter aftertaste are just right.
Pear and blue cheese salad is perfect as an aperitif.

The village of Puy-sur-Don is located at the foot of the Cévennes mountains in the Gard department in Languedoc.
The population is around 30 people, and the area is close to mountains and national parks that are registered as World Heritage Sites.
It is also one of the "smallest villages" in France.
Chateau Puech Redon, based in the village, operates a vast 400 hectares of land.
The chateau was acquired by the current owner, Cyril's grandparents.
400 hectares is about eight times the size of Tokyo Disneyland!
When Cyril took over the chateau, he felt that in order to produce better grapes, it was important to make the soil as natural as possible.
Fortunately, they had vast land and over 100 forests, large and small.
There was a polycutur foundation there.
With very little outside influence to begin with, the decision was made to make natural wine in 2015. When Cyril took over from his father, he began converting the entire site to organic farming. In 2018, he began in earnest, with the help of a consultant.
While continuing to practice biodynamic farming, he rented out about 30 hectares of his 52 hectares of vineyards to others in 2022. He left 18 hectares of carefully selected vineyard grapes and began to devote himself to making wine that he could be satisfied with.
The vineyards are spread out on a slope against the foothills of the Cevennes Mountains.
The Mediterranean climate allows for slow ripening of the grapes.
The middle of the slope has better drainage, while the clay and limestone soils of the plain are deeper and more nutritious, and the multiple terroirs give the wine depth.
Although we have only recently started organic farming, we have had beehives for over 40 years! They play a part in maintaining the balance of biodiversity.
